AOC卡斯蒂永产区 - 波尔多丘
介绍
大纪堡可谓是波尔多丘卡斯蒂永产区的最佳葡萄园代表,于1998年末被Stephan von Neipperg先生收购。
酒庄隐藏在广阔乡间的深处,所拥有的众多遗址古迹可见证庄园悠久的历史。
现在的酒庄城堡建于十三世纪,它实际上是一处拥有防御工事的农业园。人们普遍认为在中世纪时大纪堡的领主掌控了一大片宽广的土地,并且拥有多处重要封地。英法百年战争时期,大纪堡领地位于两国占领区的边界处,在军事中扮演着活跃的角色,由于领主时而归附英皇,时而投诚法国皇室,酒庄也随之被这两国交替控制。随后,酒庄归于乐贝顿(Leberthon)家族名下,该家族系波尔多议会议员世家。他们在法国大革命前夕逃亡海外时,将庄园卖给某个叫做艾田•马蒂诺(Etienne Martineau)的人,后者将酒庄发展成为一座土地全部连成一片的、面积达四百公顷的大庄园,其继承者们直到1920年才将庄园卖掉。
现今,酒庄占地达140公顷,其中90公顷用于葡萄种植。所有的葡萄都种植于山坡高处,整体朝南,拥有天然排水和日照充沛的有利自然条件。
土地为黏土石灰岩和含淤泥的黏土土质,上层为一薄层较为贫瘠的土壤,下部为石灰岩质地层,这样的地层确保了葡萄植株享有出色的水利调节系统。土壤状况和葡萄藤的平均株龄搭配融洽,所有这些自然条件构成了非常有利于葡萄种植的完美环境。

葡萄酒酿造
- 葡萄采摘:手工采摘,用小筐装运,在去梗前后进行两次分拣,无破皮程序,分拣后由传送带运输.
- 酿造:在有温控的木制及混凝土酿酒罐中进行酒精发酵,因年份而异可持续25至30天不等,采用气压式压酒帽方式萃取。
- 苹果酸乳酸发酵以及陈酿:在橡木桶中进行(其中新橡木桶的比例最多可达50%),对那些细腻的酒渣进行苹果酸乳酸发酵。不同的年份,如有必要,可对葡萄酒进行澄清和过滤的操作。
- 陈酿期: 15到18个月
